Ladies lunch FAVORITE! Cilantro-Lime Chopped Salad

Once a year my mom hosts a "Quilting Club" lunch 
(going on 20 plus years)! 

This year I was lucky enough to plan the menu and do the cooking AND The women LOVED IT! 
So I thought I would share what was on the menu. F.Y.I. my mom eats Gluten-Free so this is for all you G.F. eaters too!!!


You may recognize this recipe because it is in the little recipe book "When Life Gives you Friends".  This recipe comes from my sweet friend Lindsey Merten and it is so so so so GOOD!!!
You'll want to "pin" this one...

Cilantro Lime Chopped Salad

2 large orange or red bell peppers, cut 1" pieces
1 red onion, cut 1 " pieces
2 cups frozen sweet corn (I like the Costco frozen sweet corn)
olive oil and salt and pepper

Wash, cut and seed peppers. Place on a cookie sheet lined with foil. Pour corn on half the cookie sheet and peppers on the other half. If you are making a LOT than do one cookie sheet of corn and one of peppers and onion. Drizzle with olive oil and salt and pepper
Roast in the oven at 450ยบ until slightly blackened about 20 minutes (watch closely the last few minutes). Remove from oven and cool.

Arrange veggies in piles or rows on platter (kind of like a cobb salad). Along with the roasted peppers and corn you will have...

1 medium jicama, peeled and cut into 1/2 inch pieces
1 can black beans, drained
2 cups cherry tomatoes, cut in half
2 large avaocados
1/4 cup fresh cilantro

Cliantro-Lime Dressing
1 clove of galrlic, minced
3 T. lime juice
2 T. orange juice
2 T. honey (or to taste)
2 t. onion, chopped fine
1/2 t. cumin
2 T. fresh cilantro, chopped fine
1/4 cup olive oil
salt to taste

Combine dressing ingredients and whisk together (I usually just throw them all in the blender). Drizzle dressing on top of veggies and serve.

Looks Yummy!!! I love the quilt too!! I love the quilting club. I miss hearing about each of them & how their families are doing. I also miss hearing about all the different recipes each lady comes up with. Glad you shared this one. :)
