The Simple Joys of Life... PLUS Oatmeal Cookies with a Browned Butter Glaze









This post is truly one of those happy, sappy, gratitude posts about the simple joys of life….But I won’t bore you with the details if you happened to pop in quickly for this delicious recipe…So recipe first….ramblings to follow:

Oatmeal Cookies with Brown Butter Glaze

1 cup butter, softened
¾ cup sugar
1 cup brown sugar
2 large eggs
1 t. vanilla
2 cups flour
2 ½ cups rolled oats
1 t. soda
½ t. baking powder
1 t. salt

Add in: Raisins, toasted almonds, or chocolate chips...

Mix together butter and sugars. Add eggs and vanilla and mix again. Add dry ingredients and mix until combined.
Bake 350º 8-9 minutes (these cookies do not brown much). Let cool and drizzle with glaze.

Browned Butter Glaze:
4 T. butter
2 T. milk
½ t. vanilla
1 ½-2  cups powdered sugar

Heat butter in a small saucepan until it browns slightly. Pour into mixing bowl. Add milk and vanilla and mix with a hand mixer. Add powdered sugar until you reach the desired consistency. Drizzle over cookies. Enjoy!

Maybe you’ve read my story…likely you haven’t.

But to sum it up quickly life gave us a big helping of lemons a few years back.  After leaving behind our beautiful house (that we could never sell) to pursue a new job (that didn’t pan out) we found ourselves in a lot of debt and heartache.  It took some humbling and then some more humbling and then a big slice of humble pie for me to learn the lessons God had in store for me.

Some of which were: slowing down, appreciating the little joys of life, learning responsibility, sacrifice and hard work, finding my passion, pursuing my talents, more humbling, and following my heart.

We have all made sacrifices in this household, including my kids.  We have simplified our lives in a world that seems ever complicated. No fancy birthday parties, mostly used clothes and hand-me-downs. We have moved and moved again with our last stop at my parents house (yes I even moved back home….I told you there was a lot of humbling).

Although my parents were ever gracious and we never went without….we still were living in cramped quarters (essentially a 1 bedroom basement apartment with 6 people).  All 4 of my kids slept in one bedroom and Josh and I made our cozy bedroom in the basement family room. 

What little furniture, kitchen gadgets and necessities we still owned stayed boxed up in a storage unit for over a year.

But last week that ALL changed. We finally found our own little house to rent and it’s perfect! It’s not very big….but I feel like I just moved into my dream house. I mean seriously…I HAVE A PANTRY, I HAVE MY KITCHENAID, I HAVE A BATHTUB, I HAVE A GARDEN,  I HAVE MY BOOKS, I HAVE A YARD, I HAVE MY KIDS AND MY HUSBAND ALL RIGHT HERE CLOSE AND I FEEL SO BLESSED!

I just had to share the good news.  

Life is funny. It’s all about perspective.

So count your blessings. 

Oh yes....We have a nice new neighbor that helped us unload the moving truck. I told him that I make cookies for nice neighbors and he said his FAVORITE cookie EVER was an oatmeal cookie with a little glaze. Needless to say he liked these A LOT!  YOU WILL TOO!

Ali, I so appreciate you sharing your story. So many of us have faced some of the most impossible of situations over the past several years...and if we could all drop the prideful "act" and get real I think we could all be happy living life simply...without comparisons. I LOVED Elder Holland's talk in conference about not envying others...not taking a swig of pickle juice every single time everyone around us has a great moment. Anywho...thanks again for sharing. You are truly one of my heros, even though we haven't seen each other since high school...I feel like we have kindred spirits and I LOVE following you and watching your dreams come to reality. :-) CONGRATS ON THE NEW HOME, and the awesome neighbor!
